What do you need to add?
- 650 ml whole milk or plant-based drink.
Method:
Heat 650ml of whole milk or plant-based drink (for lactose-free cream) in a saucepan or in the microwave. Add the 200g of this cream in powder form and mix with a whisk. Replace a few times on the burner or in the microwave until the cream thickens.
Season as desired: lemon zest, Saracino flavouring pastes or 100g of dark chocolate.
To prepare creme legere with chantilly: Leave the cream to cool completely in the fridge. Prepare 150 ml chantilly (Whipped cream) add to 300 ml of the cream patisserie or 200ml half whipped vegetable cream (in the case of lactose-free cream) with 300ml cream patisserie. Mix with a Maryse silicone spatula slowly in order not to lose the air incorporated into the cream. Season again if desired as per creme patisserie. This mixture becomes a velvet like cream that stands on its own and can be used to fill soux, eclairs, cakes, as a topper on cupcakes and is in general a super versatile tasty cream!
INGREDIENTS: cane sugar, corn starch, maltodextrin, rice starch, flavors, spices. Origin of cane sugar: EU and non-EU. May contain: milk proteins, eggs, soy, nuts. Store at room temperature in a dry place. Do not expose to changes in temperature or heat source.
