Basic Characteristics & Technique:
Ingredients: Eggs, sugar, flour, melted butter, baking powder and lemon zest.
Serving: It is best to eat them warm, shortly after baking.
Secret of Success: Refrigerating the dough (even for a few hours) is crucial for the dough to "settle" and create the characteristic bulge (hump) during baking.
Recipe (for 12-15 madeleines):
Beat 2 eggs with 100g. sugar and 20g. honey until fluffy.
Add 100g. flour (sifted with 2 tsp. baking powder) and zest of 2 lemons.
Gently incorporate 100g. melted butter.
Leave the dough in the refrigerator for at least 1 hour.
Butter and flour the special mold, fill the pockets and bake at 190°C-200°C for 8-10 minutes, until golden brown.
